After two years researching and six months recording, the new Matthew Herbert album is released. This record aims to show up the travesties of the modern food industry – to tell some of the hidden stories behind the overly-elaborate and wasteful packets. It looks at what's on the menu and asks you to makes decisions based on criteria other than taste. The album will include tracks made from a grain of sugar, 30,000 chickens, a salmon farm, the sewers below London and water. PLAT DU JOUR has been researched for eighteen months with the help of Polly Russell from the British Library and numerous other helpful specialists and authorities. Herbert says: “I'm not really sure what I have created, but I do know that I haven't thought more about anything in my life. Every sound, note and object on this record has a reason for being there. If it sounds naive, it's supposed to. If the track lasts a certain length, it's designed that way. It doesn't make the record any good necessarily, but it does make it impossible for this music to float off to that place music so casually occupies these days: the disposable. The ambition is to try and take steps further and further backwards from the celebrity and idolatry of the artist and move the listener closer and closer to the stories the work contains. Certainly the record is the work of a lot of people. Even simply the 3255 people eating an apple. Without any one of them, this record would have sounded different.”
